1. Freezing Turkey Wings:

Freezing is one of the most common methods for preserving turkey wings. It keeps the meat safe to eat for an extended period.

Materials You’ll Need:

  • Turkey wings
  • Plastic freezer bags or airtight containers
  • Freezer labels and markers
  • Freezer thermometer (for maintaining proper freezer temperature)

Steps:

  1. Clean and Prep the Wings:
    • Ensure the turkey wings are clean and free of any feathers, dirt, or blood. You can rinse them under cold water and pat them dry with paper towels.
  2. Portioning:
    • Decide whether you want to freeze the wings whole or cut them into smaller portions. Cutting them into sections can make them easier to use for various recipes.
  3. Wrap or Package:

3. Canning Turkey Wings:

Canning turkey wings allows for long-term preservation in a sealed jar. Use a pressure canner for this method, as turkey is a low-acid food and requires proper processing to ensure safety.

  • Pressure canner
  • Canning jars, lids, and bands
  • Canning tools (jar lifter, funnel, lid lifter)
  • Canning salt (optional)

Steps:

  1. Prepare the Wings:
    • Clean the turkey wings thoroughly and remove any excess fat or skin.
  2. Sterilize Jars:
    • Sterilize canning jars, lids, and bands by boiling them for a few minutes or following the manufacturer’s instructions.
  3. Pack the Jars:
    • Pack the cleaned turkey wings into the sterilized canning jars, leaving about 1 inch of headspace at the top. You can add a pinch of canning salt if desired.
  4. Seal Jars:
    • Wipe the jar rims clean, place the lids on top, and secure them with the bands. Ensure they are tightened but not overly tight to allow air to escape during processing.
  5. Pressure Can:
    • Process the jars in a pressure canner following the recommended time and pressure settings for turkey. This typically takes 75-90 minutes at 10-15 PSI (pounds per square inch), but times may vary based on your altitude and canner type.
  6. Cool and Store:
    • After processing, allow the jars to cool naturally. Check that the lids have sealed properly (they should not flex when pressed). Store the sealed jars in a cool, dark place.

Properly canned turkey wings can last for a year or more when stored in a cool, dry area. Be sure to follow all canning safety guidelines to prevent spoilage or contamination.
